What Sup: Make your own gnocchi with garlic and sage butter

This is the easiest thing I have ever made! You need:
4-5 medium potatoes (peeled and boiled in salted water till soft)
Cup and a half of Cake flour
1 egg beaten
Butter, garlic and fresh sage leaves for the sauce
Black pepper and salt to taste


To make the Gnocchi you need to mash the cooked potatoes and then push it through a sieve till very fine. Add the flour and 1 large egg to the potatoe and mix till a dough is formed. My hubby was kind enough to do this part. Roll dough into long sausage shapes. Cut into small bite size pieces and press with a fork. Boil till they float to the top in the salted water (about 5-8 min). Serve with melted butter, sage and garlic.

What sup: Roasted Vegetables and BBQ Sticky Chicken

To make the sticky chicken marinade: 1 bottle Asian dipping sauce, 3 tbs tomato sauce, soy sauce, 1 tsp honey and lemon juice.
Put these on the braai and enjoy with the roasted veggies.

Just looking at these colourful vegetables will make you feel very healthy. Cut all the veg into chunky pieces(the rustic look good for this dish). You will need 1 large sweet potato, butternut,1 green apple (know this sounds odd buts its divine with the sweet potatoes and spices), Cinnamon, nutmeg, olive oil, 1tsp brown sugar and a pinch of salt. Roast at 180 degrees for about 1 hr or till vegetables cooked through.

What Sup: Lemon Fridge Tart

This is a ridiculously easy dessert! It takes less than 10 min to make and 1 hour to set. It's a very light dessert and the flavour of the lemon is refreshing. You will need:
1 (200 g) packet tennis biscuits
100 g butter or 100 g marg 

1 can condensed milk
½ cup fresh lemon juice
2 cups Cremora , powder
1 cup cold water

Directions:

  1. crush the biscuits and mix with butter to form a crumbly mixture.
  2. line a pie dish with the biscuit mixture and place in fridge.
  3. mix together the condensed milk and lemon juice.
  4. in a seperate bowl, whisk the cremora powder and water until thick-ish.
  5. combine the cremora mixture and the condensed milk mixture
  6. pour over biscuit base and chill for an hour.

What Sup: Lentil and Aubergine Bobotie

This feeds 4 people easily and a real winter warmer, perfect for a dinner party or if your mum is visiting. Its simple and satisfying. Its a traditional South African dish with a vegetarian twist.
All you need is:
1 and a half can lentils
1 Aubergine diced up
1 onion
2 cloves garlic
2tbs curry powder
3 tbs hot chutney
1tsp turmeric
6 Bay leaves
4 large eggs beaten with 1 cup of milk
rice: raisins, sugar and turmeric

Fry the onion and aubergine in olive oil till soft, add garlic curry powder and turmeric and fry for another min or so.  Place in an ovenproof dish and pour over the egg and milk mixture. Put the bay leaves on the top and bake for 40 min. Serve with some yellow rice.
When making the rice cook as per instructions at the rice packet, add 1 tbs sugar to the rice as it's boiling. Add 1tsp turmeric and half a cup raisins. Serve with a little sliced banana or dried coconut.

What Sup: Homemade Vegetable Soup

You will need: 4 stalks celery and the leaves, 4 leaks,1 onion chopped, 2 garlic cloves, 1 tsp nutmeg,chicken stock 1 litre,1 turnip peeled and finely, 6 large carrots peeled and finely grated, 1 packet white onion soup powder, 2 cups butternut diced, 1 potato diced into cubes. Right at the end you can add 1 can of borlotti beans or kidney beans.
As a child, I used to love my mother's homemade vegetable bean soup. In the winter it brought comfort and even years later when I made it for my husband Jay, he loved it just as much. Especially after a hectic day at the office. With simple, inexpensive ingredients my mother's homemade vegetable soup is very easy to put together. Although she had no written recipe for her soup, I followed her around as she made it one afternoon many years ago and made metal notes of the ingredients and quantities so that I could replicate her recipe.
You will first need to fry up the onion, garlic and the leaks in some olive oil till translucent. Then add the chicken stock and all the other veg and simmer till all the veg is soft. At the end you can add the onion soup to thicken the soup and use your blender to make it smooth. You dont have to do this if you prefer chunky soups.
I put the soup in a blender and then added the beans. Serve with some bread or croutons.

What Sup: Simple Pasta (that takes only 20 min to make!)

When you have had a long day at work this dinner is perfect,
simple ingredients that are packed with flavour make this a great pasta dish.

While your fresh pasta is boiling for 8 min you can fry up the rest of the ingredients, fry the following in olive oil: cherry tomatoes,baby marrows in thin slices (ribbons), 1 clove garlic, green chilly if you like a bite and fresh sage. I also added a little butter and the juice from 1 lemon as well as a little lemon zest. Black pepper and salt to taste.

Always go for fresh pasta if you can, its so much better! This was only R15,99 at Woolworths and is enough to feed 4.

To finish off this pasta dish you MUST have strong Italian cheese to sprinkle on top. I used Parmasen.
Dinner sorted in only 20 min!

What Sup: Jay's Spicy Jambalaya

Jay made a divine dinner last night. He served a spicy veg gumbo (his words) on a bed of shredded potatoes (rosti) and topped with guacamole.
Rosti so easy! Believe it or not they from a packet, see photo below.

You now get easy rosti mix-found this at a deli. All you do is squeeze the shredded potatoes out of the bag and into the pan!

Jay used 1 can lentils (drained), baby marrows, 1 large onion, garlic,chillies, 2 tsp smoked paprika, 1 can tomatoe paste and one chopped red pepper. First fry the onions, garlic and chillies with the spice. Then add veg and simmer till baby marrow soft.
Final ingerdient that was on top of the spicy vegetable mix: A little white wine vinigar, salt, pepper and a ripe avo mashed together till smooth.

What Sup: Stuffed Red Pepper with Roasted Vegetables

You will need to cut 1 large red pepper in half and remove seeds. Stuff with filling: I used 4 tbs low fat cream cheese,spring onion,and finely chopped mushrooms. I sprinkled breadcrumbs and some spring onions on the top to finish it off.

I decided to pop everything in the oven, so much easier and less cleaning up! With the peppers I served chopped butternut with a drizzle of  olive oil ,nutmeg and cinnamon. I coated the new potatoes in a little garlic and butter. I then placed tray in a preheated oven of 180 degrees and roasted for about an hour.

A health dinner that is quick and easy! I served dinner in a square plate and added a little honey to the butternut.

What Sup: Pea, Mint and Exotic Mushroom with Rosmarino


Pea,mint and mushroom with Rosmarino pasta rice.
Great vegetarian meal that will warm you up on a cold evening.
Promise you wont miss meat with this dish!
Fry spring onions and mushrooms in some oil
Now add the pasta rice about 2 cups (or risotto if you prefer). Fry until all rice is coated in oil.
Now add stock slowly about 6 cups of veg or chicken stock.Stir continuously adding stock till
pasta rice (or risotto)cooked. Add peas and the chopped mint at the end and stir. Season with some black pepper and serve.
Found this Rosmarino in Woolworths and this was the
 inspiration for dish- you could also do this same dish with Risotto.
My must have ingredient: Avo oil infused with garlic is fantastic! It is also available with lemon.

I served it in an oval dish with mint to garnish.
