What Sup: Mexican Vegetarian Chili served with Nacho's

Feel like a bit a spice to warm you up this winter?
Get out your soup pot or slow cooker and fix up a batch of this delicious, spicy vegetarian chili! It's ready in no time, and packed with vegetables so its healthy :)
Serves 4
You will need:
30g Coriander leaves chopped finely (keep some for garnish when serving)
2 carrots peeled and diced
2 millies- cut off the cob
1 tomatoes chopped
1 large onion finely chopped
2 Peppers- green and yellow pepper diced
Half a jar Chipotle smoked paprika chilli sauce (at Woolworths with other Mexican products)
Secret Ingredient: some Willie's Supreme 100% Madagascan cacao grated into chili, about 2 tbs
1 Packet of nachos corn chips
Some strong cheddar cheese to garnish

Add all vegetables and the sauce into your slow cooker

Cover with grated cheddar and close lid. The slow cooker needs to be put on low setting
 Add chopped raw vegetables, grated cacao, half the bottle of sauce with half a cup of water into your slow cooker . Mix so that all ingredient coated in the salsa sauce . Top with grated cheese and coriander and allow to simmer in your slow cooker on low setting for 3 hours. Serve with nachos and sprinkle some coriander to garnish.

Chilli sauce I used for this recipe, it has a lovely
smokey flavour and has the perfect about of
heat/bite in it.

This chocolate is not sweet, in fact its bitter as it is pure cacao.
this is a chocolate for cooking and goes well with savoury food.
The brand I used was Willie's Supreme Madagascan Black Cacao.
I grated 2 tbs and added it to the chilli.
