For a day out in the vineyards, you must visit Noordhoek. It is not only breathtakingly beautiful but family-friendly. They offer picnic baskets, as well as wine tasting and food markets on a Wednesday and Sunday. The food is fresh and there is a lovely variety available.

What Sup: Avo, Chickpea Sundried Tomato and Spinach Salad


Avocado, Chickpea, Tomato and Spinach Salad

So with a baby on the way and my focus shifting to healthier eating habits...this salad is both nutritious and very tasty! It is also quick and easy to make, which is essential when you feeling a little tired carrying the extra weight of a growing little baby. This will honestly take less than 10 min to prepare.
You will need:                  Recipe to serve 4 people
3 large ripe avocados (I prefer Hass avocados as they are creamier)
1 bag baby spinach (300g)
1 can chickpeas rinsed
3 large sun-dried tomatoes chopped into small pieces

For the dressing: combine 3 tablespoons olive oil, 1 clove garlic finely chopped, 1 teaspoon lemon juice, 1 tablespoon mayonnaise, salt and pepper to taste. You can add more lemon juice if you prefer more acidity in dressing.

Combine spinach, avocados (roughly cubed and mashed so they coat the leaves) and a can of chickpeas. Coat with dressing and enjoy!
