What Sup: Veggie stack

This is a healthy satisfying dinner and it's packed with goodness and flavour!

You will need vegetable patties (you could make these yourself or be lazy like me and buy them ready made at Woolworths for about R22 for 4 its a great deal).
If you have the time to make a veggie pattie: use 1 can chickpeas, cooked mashed butternut, chopped spinach, breadcrumbs, and egg to bind all the ingredients together. Now mix and form a pattie, bake for 30 min.


These are the patties I bought at Woolworths, really tasty.

Butternut cut into disks (2 disks per person)

Onion rings (read onions give lovely flavour and colour to dish)

Little cream cheese and chives (optional)

Potatoes sliced into very think disks (I left the skin on the spuds)



Roast the butternut (2 disks per person) and potatoes in oven with a little olive oil, salt, pepper and sprig of rosemary  for 35 min or till cooked through on 180 degrees.

Pop  ready made patties in for the last 15 min (30 min if you made your own). Now for the layering.......Start with potatoe slices then a patty, butternut, onion then a dollop of the cream cheese and chives.  Can be served this with a salad to be uber heathy.
